Instructions

Tap a step to mark it done.

  1. Take the steaks out of the refrigerator 30 minutes before cooking. Pat them very dry with paper towels and season both sides with the salt and pepper.
  2. Heat the oil in a large cast-iron skillet over medium-high heat until it just begins to smoke, about 3 minutes.
  3. Lay the steaks in the pan, away from you. Cook without moving them for 4 minutes, until a deep brown crust forms.
  4. Flip the steaks. Add the butter, garlic and herbs to the pan. When the butter foams, tilt the skillet and spoon the butter over the steaks for 3 to 4 minutes.
  5. Check the thickest part with an instant-read thermometer: 130°F for medium-rare or 140°F for medium. The USDA recommends 145°F followed by a 3-minute rest.
  6. Move the steaks to a cutting board and let them rest for 5 minutes. Slice against the grain and spoon the pan butter over the top.

Cook's tips

  • A heavy skillet holds heat best — cast iron or stainless steel both work well.
  • Turn on your range hood or open a window; a good sear makes some smoke.
